Mulled Wine
There’s nothing quite like the aroma of simmering mulled wine on a cold winters evening to warm the core of any soul. My memories of this spiced hearty drink go long back and is a must when the temperature drops and the home begins to feel festive.

Ingredients
75cl Full-bodied red wine
60ml Ruby port
60g Light brown sugar
4cm Pealed, sliced ginger
2 Cinnamon sticks
8 Cloves
2 Oranges
1 Lemon

Method
Zest the lemon and one of the oranges. Juice the zested orange and push the cloves into the remaining orange. Add everything to a saucepan with the port, wine, sugar, ginger and cinnamon sticks. Add 500ml of water and slowly heat. Do not allow to boil, and gently heat for 20 minutes.

Once cooled a little pour into mugs or glass tea cups and garnish with more cinnamon sticks or orange zest.
